Ciccioli e strutto

The head in a box is a sausage produced with the parts of the pig's head and the typical salami of "turns out". All meats are boiled in salted water, minced. The tanning is composed of salt, pepper, spices .. The mixture is then stuffed into the blind casing of the beef or into the canvas bag and then left to cool.
